Церетели — автор более 5000 произведений живописи, графики, скульптуры, монументально-декоративного искусства (фресок, мозаик, панно). В «брежневскую эпоху» был главным художником МИД СССР и отвечал за художественное оформление советских посольств за рубежом. В 1980-м был главным художником московской Олимпиады, в 1995-м — главным художником Мемориального комплекса на Поклонной горе (монумент Победы с Георгием Победоносцем и 142-метровой стеллой — его работа). Скульптуры авторства Церетели есть во многих странах мира, в частности, в США, Великобритании, Японии, Франции, Испании.
